Meet the Chef: Ron Andrews

Chef Ron Andrews has been the regional executive chef at The Mansion at Rosemont since October 2016 and has served as executive chef with Compass Group since 2004. He received his culinary degree from The Culinary Institute of America in Hyde Park, New York.

Q: What do you enjoy most about working at The Mansion at Rosemont?

A: I like the personal connections I have with our residents. Sharing recipes, stories and cultural experiences can be mutually enriching

Q: How would you describe your cooking style?

A: My cooking style is classical with an emphasis on seasonal and local ingredients. I believe variety is essential. My team and I keep our menus exciting by exploring cuisines from around the world.

Q: What’s your favorite dish on the menu?

A: Believe it or not, my favorite dishes on the menu would be Lasagna—the way Mama used to make it—and the classically prepared Pot Roast With Root Vegetables. I also love taking a creative, contemporary approach to traditional comfort food.

Q: What do you like to cook at home?

A: My favorite dish to cook at home would be anything on the grill, including fruits, vegetables and a well-marbled rib eye.

Q: What is a tip or a technique you use in the kitchen that people may not know about?

A: When preparing any dish, always season each ingredient at each stage of the cooking process—never wait until the very end to season the food.
