Chef Bill has been with Grand Lake Gardens since February 2017. Previously he was at Piedmont Gardens, Grand Lake Gardens’ sister community in Oakland. Following high school, he attended culinary school and trained under the renowned Chef Kenneth Wolf.
Q&A with Chef Bill
Q: What do you enjoy most about working at Grand Lake Gardens?
A: One of the things I like most about working at Grand Lake Gardens is creating memorable dining experiences for our residents.
Q: How would you describe your cooking style?
A: My cooking style is eclectic. I love to combine styles, techniques and ethnicities to create wonderful experiences.
Q: What’s your favorite item on the menu?
A: Currently, my favorite menu item is our Thai chicken stir fry because of its bold flavors.
Q: What do you like to cook at home?
A: While I do not consider myself to be a vegetarian, I mostly cook vegetarian meals at home.
Q: What’s a tip or technique you use in the kitchen that people may not know about?
A: When making chocolate ribbons, heat your sheet pan in the oven for five minutes; spread the melted chocolate on the back of the pan; and then freeze it. Remove the pan from the freezer and let sit for five minutes before making your ribbons.
