Meet the Chef: Todd Vanderpoel

Chef Todd has been at The Terraces at San Joaquin Gardens since 2012. He previously served as executive chef at the San Joaquin Country club for 17 years and as executive chef at the Sunnyside Country Club for 12 years. He trained at the Culinary Institute of America in Napa, California.

Q: What do you enjoy most about working at TSJG?

A: I enjoy the hands-on teaching and training of my chefs and the daily engagement I have with our residents; and I have the pleasure of many long-term personal connections with the residents and their families.

Q: How would you describe your cooking style?

A: My cooking style is an influence of both French and Mediterranean cuisine. The combination allows me to artistically infuse fresh and seasonal offerings from the San Joaquin Valley to make my culinary specialties.

Q: What’s your favorite item on the menu?

A: There is nothing better than our braised meats and root vegetables in the fall. The flavor profile is so deep and rich, especially when you add a little wine and fresh herbs.

Q: What do you like to cook at home?

A: I grow my own vegetables and herbs and love to pick whatever is in season to accompany my barbecued meat and fish

Q: What’s a tip or technique you use in the kitchen that people may not know about?

A: The secret to a perfectly boiled egg is to cover your eggs with cold water and salt; boil on medium high heat for 20 minutes; remove from the stove and fill the pot with cold water and ice to cool. When you peel your eggs the shell does not stick and the yoke is yellow without a dark ring.
