Chef Shannon has been with Westminster Gardens since 2015. She previously worked as the sous chef at Royal Oaks and at Technique Restaurant, which is part of Le Cordon Bleu College of Culinary Arts. She received her culinary education at Le Cordon Bleu.
Q: What do you enjoy most about working at Westminster Gardens?
A: I really enjoy working for the residents at Westminster Gardens. My day brightens when I walk into a full dining room of happy residents. I am extremely blessed to be here.
Q: How would you describe your cooking style?
A: I would describe my cooking style as from the heart. I put in a lot of heart and soul into everything I make.
Q: What’s your favorite item on the menu?
A: I love our Mexican street corn. We served the corn at our Fiesta last summer; it was such a huge hit that we added it to our menu by popular demand.
Q: What do you like to cook at home?
A: Breakfast. For my family, I enjoy coming up with new healthy breakfast items—like egg muffin cups with sweet potato hash, green onions and bell peppers, or breakfast quesadillas with cauliflower tortillas.
Q: What’s a tip or technique you use in the kitchen that people may not know about?
A: Always remember to partially steam your vegetables or potatoes before roasting. This helps cook them thoroughly without burning them.
