Chef Herve has been at Rosewood since June 2016. Previously he worked with Sogeres (a Sodexo subsidiary) in France before coming to the U.S. to work with Sodexo North America and in several HumanGood life plan communities, including The Terraces at Los Altos and Valle Verde in Santa Barbara. He graduated from culinary school in Avignon, France, in 1981 and has since been travelling the world crafting his cooking skills.
Q&A with Chef Herve
Q: What do you enjoy most about working at Rosewood?
A: I enjoy the happiness, surprises, satisfaction and kind words I hear from our residents.
Q: How would you describe your cooking style?
A: I love to combine many cultures from the south of France and therefore create a diverse culinary environment which is a reflection of my food from the rich Mediterranean earth.
Q: What’s your favorite item on the menu?
A: My favorite menu items are the most recent additions of the Kansas-style pork shanks, paella Espana and veal in white sauce. However, I love the made-to-order action station items such as the steak salad, pasta and stir fry as well as the bananas foster.
Q: What do you like to cook at home?
A: I like to barbecue a lot which is fast, easy and tasty. I also enjoy making homemade soups, garlic bread and pasta.
Q: What’s a tip or technique you use in the kitchen that people may not know about?
A: If you are looking to cut a lot of cherry tomatoes in half at one time, put them between two inverted plastic lids or plates and run the knife through the center. Voila!
